History: (from Wikki)
Sandor Clegane—known as the Hound for his unquestioning loyalty, obedience, and readiness to kill on command, as well as for his banner and helm—is a retainer to House Lannister and the younger brother of Gregor Clegane. He is regarded as one of the most dangerous and skilled fighters in Westeros, and many believe he fears nothing. His face is distinguished by gruesome burn scars, which he received as a child when his brother pushed his head into a brazier. Consequently, he fears fire and hates his brother. When his brother is knighted and becomes even more brutal, Sandor comes to hate knights and views knighthood as hypocrisy. He vows to never become a knight and quickly corrects those who refer to him as Ser, a knight's title. He is described as a tormented man driven by anger and hate, aspiring only to kill his brother. In A Game of Thrones, he acts as bodyguard and servant to Prince Joffrey Baratheon, who calls him Dog

He loathed it all. To him court was not much more than a litany of self-congratulatory tripe rewarding mediocrity on the field. In this case it was bestowing the rank of knight on some duke’s halfbred whelp that had done little more than manage to knock down one of Joffrey’s guard. The boy had a plethora of knights at his disposal, so many that it was odds on that some truly didn't deserve the rank and should have been disposed. In truth it had already happened as the heir apparent had already disposed of the knight that had failed him on the field. Not in the open, of course; the child had him dragged out of the local tavern in the wee hours and knifed; all to give the appearance of a mugging, a fit of ichor from foul peasant; but it had been the Hound himself that had dispatched the errant knight.
Which was why there was a new replacement being inducted into service.
Sandor was thankful for the helm that hid his visage. Not that it was pretty to look at to begin with, the pulled discolored skin making him quite fearful to behold; but he couldn't help but sneer in disgust as the young man was belted and then congratulated by his new kinsmen, hands clapped to shoulder with much joviality. the Hound would have stormed from the sight but for his charge. He forced himself to hold his ground, positioned just behind and right of the throne where Joffrey sat poised, wearing a smile that Clegane knew was false. It had been an embarrassment, and affront to Joffrey, to have one of his men bested.
And by the look of things, the Hound was sure he would soon be called again to deal out the boy’s justice when this new knight failed to hold the standard as well.
